White Truffle Macaroni and Cheese

Side Dishes

(This is an adult version of a children's favorite!)

Chipotle Olive Oil or Garlic Olive Oil can be used in place of the White Truffle Oil.


  • 1 pound elbow macaroni
  • 2 tablespoons White Truffle Pure Olive Oil
  • dash of sea salt
  • 3 tablespoons Butter Flavor Olive Oil
  • 4 tablespoons all-purpose flour
  • 2 cups whole milk, warmed
  • 1 teaspoon white pepper, ground
  • 1/2 teaspoon cayenne pepper
  • 3/4 cup Fontina cheese, grated
  • 3/4 cup Gruyere cheese, grated
  • 3/4 cup extra sharp cheddar cheese, grated
  • 1/4 cup Parmesan cheese, grated
  • 1/2 cup bread crumbs


Preheat oven to 350o.  Cook pasta according to package directions.  While the pasta is cooking, heat the Butter Olive Oil over medium heat in a saucepan.  Whisk in the flour to create a roux for the white-sauce base.  Cook the flour and Butter Olive Oil over low heat for 5-7 minutes; add the warm milk in a steady stream.  Cook the white sauce for 10 minutes.  Add the salt, pepper, cayenne pepper, and the Fontina, Gruyere, and cheddar cheeses; cook for two minues over low heat.

Drain the pasta and place into a baking dish large enough to hold the pasta and all the sauce.  Pour cheese sauce over pasta and sprinkle with bread crumbs and Parmesan cheese.  Bake for 15 minutes or until the top is well browned and crusty.

Let rest 10 minutes, drizzle with White Truffle Oil.  Enjoy!
