Smoked Salmon in Cucumber Cups

Appetizers

From the Culinary Institute of the Carolinas at Greenville Technical College.

Ingredients

  • BASE
  • 2 English cucumbers
  • FILLING
  • 1/2 pound smoked salmon
  • 2 eggs, hard-boiled yolks
  • 1/4 cup capers
  • 1/2 cup red onion, diced
  • as needed Tuscan Herb Olive Oil
  • TOPPING:
  • 2 cups panko crumbs
  • 2 eggs, hard boiled whites
  • 1 tablespoon fresh dill

Directions

BASE:
Cut the cucumbers into 1 inch long cylinders.
Scoop out a portion of the center to make a bowl.

FILLING:
Hard boil the egg.
Separate the whites from the yolks.
Reserve the egg whites for the topping.
Chop the egg yolks.
Small dice the red onion.
Combine the ingredients and dress with the Tuscan Herb Olive Oil.

TOPPING:
Chop the dill.
Chop the egg whites.
Combine the ingredients together.

ASSEMBLY:
Fill the cucumber cups with smoked salmon filling.
Garnish each with the panko topping.
Serve cold.
